The SCA Classification System: A Score for Quality
The SCA has developed a comprehensive scoring system based on a 100-point scale, used by certified Q Graders to assess green (unroasted) coffee beans. Here is a glimpse into how it works:
- Visual Inspection: Q Graders begin by meticulously examining a sample of green coffee beans for defects. These defects, categorized as primary or secondary, can negatively impact the coffee flavor.
- Cupping: The coffee is roasted, ground, and brewed according to strict SCA standards. Q Graders then evaluate the coffee aroma, flavor, aftertaste, acidity, body, balance, uniformity, cleanliness, and sweetness.
- Scoring: Each attribute is scored, and the scores are tallied to arrive at a final overall score.
The Grade Levels
- Below 65: Not rated.
- 65-80: Commercial grade, often used in instant coffee and other mass-market products.
- 80-84.99: Specialty Grade - Very Good - The minimum threshold. These coffees exhibit distinct characteristics and are of high quality.
- 85-89.99: Specialty Grade - Excellent - Exceptional coffees showcasing a complex, nuanced flavor profile.
- 90-100: Specialty Grade - Outstanding - The rarest and most prized coffees in the world. They represent the pinnacle of coffee quality.
